Every now and then, we see the appearance of new superfoods and drinks that claim to be the next big health trend. Some stay on, while others disappear as quickly as they arrived. Kombucha, however, is one of those trends that has caught on not only for its health benefits, but also for its elixir-like properties, making it a healthy alternative to fizzy sodas, and the fact that you can infuse several flavours to make it more appealing to a wider audience.

This hipster, tea-based fermented beverage is fizzy and tart, typically made using green or black tea that’s sweetened with sugar and then fermented with SCOBY  (symbiotic culture of bacteria and yeast). The SCOBY is what lends the beverage its unique characteristic, after leaving it to ferment–usually for a couple of weeks. Said to be packed with antioxidants and probiotics, this beverage is also believed to be gut-friendly and detoxifying, making it a popular pick with the health-conscious consumer. We list out several brands brewing their booch across the country that you can get your hands on.

Started by Mumbai-based husband and wife duo, Nitin Gandhi and Monika Powlowska, Bombucha brews bottles of its fermented beverages in small batches. Used to experimenting with kombucha back in London, Monika then began looking for options in Mumbai, crafting batches of their now-famous brew. Bombucha typically uses green or black tea, and sometimes white tea as well, which is sweetened with raw sugar and infused with organic fruits to lend more flavour. Launched in 2018, this Delhi-based brand started by sister duo Rebekah and Ariella Blank, (both with experience in the wellness space) creates fizzy brews in exotic variants. Drawing influences from the Himalayas, Atmosphere’s kombucha comes infused with fresh fruits and herbs. Self-taught brewer Honey Islam is the genius behind Mountain Bee, a Bengaluru-based craft kombucha brand. She stumbled upon kombucha back in 2016 as part of a volunteering project in Goa. Two years later, she launched Mountain Bee. Pick from assorted flavours like wild watermelon, pomegranate vinegar kombucha, aloha ananas, ginger, original kombucha and the signature Flower n Spice kombucha made with long leaf green tea from the Nilgiris and butterfly blue pea tisane, that’s infused with cinnamon and star anise for a warm and mellow flavour. This artisan kombucha brand was started in 2016 by journalist-turned-entrepreneur Shailaja Sharma. Offering all-natural kombucha using handpicked, organic ingredients, and brewed with loose leaf teas, fresh herbs, fruits, barks and botanicals, this Mumbai-based brand offers small-batch kombucha in assorted flavours. If a bright, sparkling kombucha is more up your alley, check out this Goa-based craft beverage brand. The brand name is a play on the words Bore (which means good in Konkani) and Cha (which means tea). Aditya Ishan Varshnei is the brains behind the operations. After sampling kombucha in the US, he decided to make his own batch back home in Goa. Since then, the brand has launched 12 variants with tropical picks that pay homage to the sunshine state. Creating a range of fermented foods and beverages, this Bengaluru-based brand by duo Adithya Kidambi and Shishir Sathyan, was started with the aim of showcasing that fermentation is a great way of preserving food and nutrition, with the addition of great flavour. Better known for its farm-fresh offerings, Delhi-based Krishi Cress also brews batches of kombucha. Currently offering two variants, you have the Kombucha ++ that is handcrafted using plant-based ferments such as Japanese mint, hibiscus and borage flowers that are grown fresh on their farms, and the Kombucha Lite is ideal for novices and also easier on the palate. Mumbai-based Anand Makhija found inspiration to brew his own kombucha from his holidays in Spain when he first came across the beverage. He then took up a workshop on learning the nuances of brewing the fermented beverage. Upon returning to Mumbai, Makhija launched KoBu. Vikram and Mashi are the duo behind this Mumbai-based homegrown kombucha brand. Having first sampled kombucha in the US, the duo returned to experiment with their own brew, selling bottles of these at local farmers markets. Some of the bestsellers include the twisted shikanji kombucha, koka kombucha that’s infused with kokum fruit, granade kombucha infused with cold-pressed pomegranate juice and black pepper, as well as the love potion 66, that has blueberries and rosewater brewed in a green tea concoction.
